Hickory Ham Sandwiches

I developed this recipe after having a Hickory Ham Sandwich at a restaurant in Guthrie, Oklahoma that was just to die for. They served it with a giant pile of fried onions and enough sauce that you practically had to eat it with a fork.

Since this weeks Carnival of the Recipes is an *all pork carnival* I thought that this would be the perfect recipe to share.

Hickory Ham Sandwiches:

1C. Ketchup
1C. Brown Sugar
1/2 C. BBQ Sauce
juice from 1 lemon

1-2 Pounds Deli Ham
Buns

To prepare: Whisk together sauce ingredients in a medium sauce pan. Bring to a light simmer then reduce heat. In another pan, warm up the deli ham until lightly browned and excess liquid is released. Toss ham with hickory sauce and warm through. Serve on toasted buns.

It is even better served with lightly fried onions, if you feel so inclined:

Thinly slice onions into strips, liberally season with salt and pepper. Toss with flour (approx 1C. per medium onion) and fry in 375 degree oil until golden. Drain on paper towels and serve warm. Enjoy!
